2 Yellow Squash

2 Zucchini

1 Bag of Fresh Broccoli

1 Green Pepper

1 Red Pepper

1 Orange Pepper

1 Red Onion

Olive Oil


Garlic Powder


Cayenne or Red Pepper Flakes (optional)

Other seasonings of your choice


Preheat your oven to 400. Chop all the veggies to your desired size and toss into large mixing bowl. Drizzle with olive oil, and season to taste with pepper, salt, garlic powder, paprika, and/or any other seasonings you’d like. Toss. Line sheet pans with foil, and evenly distribute veggies into single layer. Sprinkle with cayenne or red pepper flakes, if desired. roast the veggies in oven for approximately 30mins, or until the veggies are cooked through and at your desired done-ness. Enjoy!

*Note: You can use Mrs. Dash salt-free seasonings, which I use often when making these. I don’t add salt, but you’re more than welcome, if desired. Also, If you like your veggies slightly charred, you can put your oven on broil for the last couple minutes.
