brown butter brown sugar cookies
*note: this recipe makes 12 medium sized cookies using a 2 tbsp cookie scoop. making the smaller or larger will impact the baking time.
ingredients:
1/2 cup of butter, softened
3/4 cup of brown sugar
1/4 cup of white sugar
1 large egg, room temperature
2 tsps of pure vanilla extract
1-1/2 cups of flour
1/4 tsp of salt
1/2 tsp of baking soda
coarse flaky salt, optional
supplies:
stainless steel skillet
spatula
heat resistant bowl
2 mixing bowls
hand or stand mixer
cookie scoop
cookie sheet
parchment paper
directions:
to brown the butter: over medium-low heat, heat your stainless steel skillet with the butter. slowly let the butter melt, and then brown. this can take up to 15 minutes. the butter will foam right before turning brown, so watch it carefully so you don’t burn the butter. once browned, pour the butter into a heat resistant bowl and cool to room temperature before mixing up the dough.
to make the cookies: preheat the oven to 350 degrees. in bowl beat together the browned butter and sugars. add the vanilla and egg, and beat for about 2 minutes. in another bowl, mix the flour, salt, and baking soda. add the flour mixture to the wet ingredients, and mix for another 30 seconds, until just blended together. scoop the cookies onto a parchment lined cookie sheet and top with coarse salt, if desired. bake the cookies for about 11-13 minutes. let the cookies cool for 5 minutes on the cookie sheet, then transfer to a wire rack to cool completely, or serve warm.
