2 cups of flour
1 cup of old fashioned oats
1 cup of raisins or chocolate chips
1 cup of melted and cooled butter (2 sticks)
1-1/2 cups of brown sugar
1/2 tsp of baking soda
1/2 tsp of salt
1 tbsp of vanilla
1 egg yoke
1 tsp of warm spice mix (available for purchase from me)
Preheat oven to 325. In a bowl, mix flour, salt, and baking soda. In another bowl beat together the butter and brown sugar. Add warm spice mix, vanilla, egg, and egg yolk, and beat for about 2 minutes. Add flour mixture and mix for another 30 seconds or so, until just blended together. Add the oatmeal and raisins/chocolate chips, and mix for about another 30 seconds. You don’t want to over beat the batter. Using an ice cream scoop/cookie scoop/or two spoons, scoop cookies onto a lined cookie sheet. Bake for about 15 minutes. You want the edges to be brown, but not burnt, so watch while they’re in the oven.
*Note: The cookies came out best when baked on the top rack of the oven. They spread thinner that way, which I like. Also, if you don’t have the warm spice mix, you can just use cinnamon.
