4 ripe bananas, mashed
1 cup of walnuts, chopped
2 cups of flour
1 tsp of baking soda
¼ tsp of salt
1 cup of brown sugar
1 tbsp of vanilla extract
½ cup of vegetable or canola oil
2 tbsp of milk
¼ cup of cinnamon sugar, optional
Preheat oven to 350. In a bowl, mix flour, baking soda, and salt. In a second bowl, mix the brown sugar, bananas, vanilla, milk, egg, and oil. Then add to the dry ingredients. When mixed well, add walnuts, saving some for the top of the bread, if you want. Pour mixture into a pre-buttered (or sprayed with non-stick spray) loaf pan, and top with cinnamon sugar mix and remaining walnuts (optional). Bake for approximately 1 hour or until a toothpick comes out clean. Cool the bread for at least 30 minutes before cutting. Enjoy!
*Note: If you have nut allergies, you can remove the nuts from this recipe. also, This recipe can be made into muffins. banana nut bread will last in the fridge for around a week, and can also be frozen.
