corn succotash



2-3 tbsps of olive oil

2 yellow squash, chopped

2 zucchini, chopped

1lb of corn, fresh cut off the cob or frozen

1 red pepper, chopped

1 green pepper, chopped

1 orange pepper, chopped

1 red onion, chopped

2 cloves of garlic, chopped fine

Salt and pepper, to taste

Mrs. Dash table seasoning, to taste


Cast iron skillet


Cut all your vegetables and set aside. Over medium-high heat, warm about 1 tbsp of olive oil in your cast iron pan. When warm, add in the squash and zucchini. Cook together for about 4-5 minutes. Add in the corn, bell peppers, and onion, and cook everything together for about 2 minutes. Add in additional oil as need – you don’t want the vegetables to stick to the pan, but you want them to get slightly charred. Add in the garlic and season to taste with salt, pepper, and Mrs. Dash table seasoning. Add additional seasonings as you see fit. Continue to cook for 6-7 more minutes, or until the vegetables have reached your desired texture. Serve warm. Enjoy!

Note: if using frozen corn, it may take a little longer to cook than fresh corn. If you buy the steam-in-a-bag frozen corn, you can microwave it and drain the water before adding to your cast iron pan.
