banana oatmeal pancakes



for pancakes:

1-1/2  bananas, ripe

1-1/2 cups of old fashioned or rolled oats

3/4 cup of almond milk, or milk of your choice

2 eggs

1 tsp of baking powder

1 tsp of vanilla extract

1 tsp of warm spice mix (available for purchase from me)

topping, optional:

chopped bananas





Non-stick spray


In your blender, blend all the ingredients for the pancakes well, about 2 minutes. Set aside and let the batter sit for 5-10 minutes, or until it thickens. Preheat your skillet over medium heat and spray with non-stick spray. Pour a few tablespoons of pancake batter onto the skillet and let cook. Pancakes are ready to flip when they start to bubble on the top. Continue until all the batter is gone. Top the pancakes with toppings of your choice. Serve warm. Enjoy!

*note: if you do not have warm spice mix, you can use cinnamon.
